Egg fried rice

Serves 2 to 320 minutesEasy

Method

  1. 1Heat 1 tablespoon of the oil in a large skillet or wok over high heat. Scramble the eggs until just set, then tip them onto a plate.
  2. 2Add the rest of the oil, the scallion whites and the garlic and stir for 30 seconds. Add the peas and carrots and cook for 2 minutes.
  3. 3Add the rice, breaking up any clumps, and fry for 3 to 4 minutes until it is hot and starting to crisp.
  4. 4Add the soy sauce, the eggs and the scallion greens and toss together. Finish with the sesame oil and white pepper.
  • "Naturally brewed"

Brewed soy sauce tastes rounder. Quick, chemically made versions can taste harsh and flat.

  • Light, dark or Japanese

In Chinese cooking, light soy is the salty all-rounder and dark soy is for color. Japanese soy sauce sits in between.

  • Less sodium

Reduced-sodium versions taste almost the same and are easier to use generously.
