1. Better dressings

A teaspoon of Dijon keeps oil and vinegar mixed.

  2. Potato salad

A spoonful in the dressing wakes the whole bowl up.

  3. Mac and cheese

A little Dijon makes it cheesier, not mustardy.

Method

  1. 1Heat the oven to 425°F. Pat the chicken dry, season it with salt and pepper and lay it skin side up in a baking dish.
  2. 2Whisk together both mustards, the honey, oil, garlic and thyme.
  3. 3Spoon most of the glaze over the chicken and roast for 20 minutes.
  4. 4Spoon over the rest of the glaze and roast for 15 to 20 minutes more, until the skin is golden and the chicken reaches 175°F. Rest for 5 minutes, then spoon the pan juices over.
  • Know the styles

Yellow is mild, spicy brown has more bite, Dijon is smooth and sharp, and whole grain is chunky and gentle.

  • Short ingredient list

Good mustard is seeds, liquid, salt and maybe spices. It doesn't need much else.

  • Honey mustard

Sweet versions are great for dipping, but they won't do the same job in a dressing.
