Slow cooker pulled pork

Serves 88 to 10 hours (mostly hands-off)Easy

Method

  1. 1Mix the sugar, paprika, salt, garlic powder and pepper and rub it all over the pork.
  2. 2Put the onion in the slow cooker, sit the pork on top and pour the vinegar around it. Cook on low for 8 to 10 hours, until it pulls apart easily with a fork.
  3. 3Lift out the pork, shred it with two forks and discard any fat. Skim the fat off the juices.
  4. 4Stir ½ cup of the juices and the barbecue sauce into the pork. Pile onto buns with coleslaw and more sauce.
  • Know the regions

Kansas City is thick and sweet. Eastern Carolina is vinegar, South Carolina is mustard. Texas is thinner and savory. Alabama's is white and mayo-based.

  • Sugar near the top

Sweeter sauces glaze beautifully but burn quickly over high heat.

  • Smoke flavor

Some bottles add liquid smoke. Great for oven cooking; on a real smoker you may not need it.
