Serves 420 minutesEasy

Method

  1. 1Cook the noodles, rinse under cold water until cool, drain well and toss with 1 tablespoon of the sesame oil.
  2. 2Whisk the rest of the sesame oil with the soy sauce, peanut butter, vinegar, honey, garlic, ginger and chili oil. Add 2 to 4 tablespoons of warm water until it pours.
  3. 3Toss the noodles in the sauce.
  4. 4Top with the cucumber, scallions and sesame seeds and serve cold.
  • Toasted or not

Toasted is brown and smells like roasted sesame. Untoasted is pale and neutral.

  • 100% sesame

Some cheaper bottles blend in other oils. The label should say pure sesame oil.

  • Small bottle

You use it in drops, and it goes stale once opened, so smaller is better.
