Method

  1. 1Heat the oven to 350°F. Stir the breadcrumbs into the milk and leave them to soak for 5 minutes.
  2. 2Add the beef, onion, garlic, eggs, Worcestershire, salt and pepper. Mix gently with your hands, then shape into a loaf about 9 by 5 inches on a lined baking sheet.
  3. 3Stir the ketchup, brown sugar and vinegar together and spread half of it over the loaf.
  4. 4Bake for 45 minutes, spread on the rest of the glaze, then bake for 15 to 20 minutes more, until the middle reaches 160°F. Rest for 10 minutes before slicing.
  • Tomato first

Tomato concentrate should be the first ingredient. The more it leads, the more it tastes of tomato.

  • How it's sweetened

Some ketchups use sugar, some use corn syrup, and some have none added. Check the label if it matters to you.

  • Squeeze or glass

Squeeze bottles stored cap-down are quickest. Glass looks better and keeps the old-school ritual of tapping the neck.
