1. Spritzer

    Half juice + half sparkling

Juice in first, then the bubbles, so it doesn't foam over.

  2. Crisp batter

    1 cup flour + 1 cup ice-cold sparkling

Stir until just mixed. A few lumps keep it light.

  3. Fluffier pancakes

    Swap ¼ of the milk

Add it last and cook right away, while it's still fizzy.

  • Three names, three waters

Seltzer is plain water with bubbles. Club soda adds minerals for a slightly salty taste. Sparkling mineral water comes from a spring with its own minerals.

  • Check for sweeteners

Most flavored seltzers have none, but some do. If you only want fruit flavor, read the ingredients.

  • Small bottles stay fizzy

Bubbles fade once a bottle is open. Smaller bottles mean every glass is fresh.
