Ice + water + a handful of salt

A bucket of salted ice water chills a bottle in about 20 minutes.

  3. Keep the fizz

Stopper on, back in the fridge

Brunch mimosas

Serves 65 minutesEasy

Method

  1. 1Chill the sparkling wine and orange juice for at least 3 hours, and the flutes too if you have room.
  2. 2Open the wine slowly: hold the cork, point the bottle away from people and turn the bottle, not the cork.
  3. 3Fill each flute about two-thirds with sparkling wine, tilting the glass so it doesn't foam over.
  4. 4Top up with orange juice and add an orange slice to the rim. For a lighter mimosa, use more juice. Adults 21+.
